73% MEXICAN CACAO from Comalcalco, Tabasco. Mexican heirloom cacao is joined with singular ingredients like Slow Food Ark of Taste protected salt, a rare strain of hibiscus, and of course Mezcal in Cuna de Piedras homage to the land, traditions, and people of Mexico. Throughout most of history, Mexicos indigenous civilizations have nurtured and shaped cacao culture. Befitting this history, one of the most inspiring products on the global market arises from this Cuna de Piedra, or cradle of stone.
Mezcal made from 100% Maguey Espadin from Santiago Matatlan, a town located in the central valleys of Oaxaca, considered to be the world capital of mezcal. The agaves were crushed into an Egyptian stone mill, known as tahona, the liquid was fermented in oak vats, double distilled in copper stills and rested in white oak barrels for 2 years. For our cocoa beans from Comalcalco, Tabasco, they developed a high roasting profile which complements the woody notes of the final distillate.
