Pasture raised, boneless ham. Cured under tangerine peel and rosemary before smoking over embers of salvaged peach tree wood from a local orchard in Daviess County, Indiana. Finished with tangerine, rosemary, mustard glaze spiked with clove, cinnamon, turmeric, bay leaves. Glaze is already on the ham inside the packaging and it is fully cooked: easy to heat & carve as traditional holiday entrée. **Hams are priced at $18.75 per pound and we will adjust your account with a charge or credit once the hams arrive and we know the weights. For Thanksgiving, they came in quite a bit larger than listed. Not sure if that will be the case for Christmas. **

We source andouille from both Taylor Family Farm and Porter Road Butcher. Andouille sausage is a New Orleans staple, and PRB's is based off a famous recipe that was passed down from a New Orleans chef. These links are seasoned with cumin, cayenne, paprika, and ancho chili pepper, along with the addition of milk powder to give them a great texture. After hand-twisting the links, they smoke them over local cherry wood to give the flavor an extra depth that makes them perfect for gumbo.
