We have beautiful whole sides of Coho salmon from Virgin Bay Seafood that have just arrived for one of our favorite salmon recipes... equally delicious cooked over a campfire or grill, or the kitchen stove. The salmon gets covered in a bath of sugar, salt, and spices and requires 2 hours to partially cure in the refrigerator. Then give it a quick rinse and a delicious dinner is ready in less than 10 minutes. Add salad greens and a baguette for a simple but delicious dinner.
Servings: 4, Cook time: 10 minutes (+ 2 hours of curing)
1 spice packet (Himalayan sea salt and cane sugar, for partially curing the salmon)
